  • Proofing doughs with inclusions

    Bulka baskets are porous and may absorb color and moisture from inclusions like olives, berries, or nuts. Protect them with a kitchen towel or liner to reduce staining. For enriched doughs with butter, sugar, or cinnamon, use another type of banneton, such as rattan, to keep your wood pulp basket in top condition.

  • Pick basket size by final loaf weight

    During baking, loaves lose about 15–20% of their weight. Choose your banneton based on the finished loaf weight, not the raw dough or flour. This keeps the dough snug in the basket, helps it hold shape, and prevents overflow ensuring the best rise and oven spring.
